Tomatoes are rich in lycopene and carotenoid, they reduces cancer risk and cardiovascular disease. Lycopene in tomato is better absorbed when some fat is present (eg: Avocados) it also helps absorption of another carotenoid called lutein you can sprinkle walnuts, unsalted pistachios over your salad as well.
